IT'S OUR FIRST EVER FOOD POST! NomNomNomNom. Just in time for Father's Day, we are sharing the recipe for these delicious Mississippi Mud Brownies. The recipe is from my boyfriend's mom, who originally got it from an old cookbook, but we are sharing it with you all today.
You'll Need:
Brownies
2 Sticks of Margarine
5 1/2 Tablespoons of Cocoa
5 1/2 Tablespoons of Cocoa
1 1/2 Cups All-Purpose Flour
2 Cups Granulated Sugar
4 Eggs (I used egg beaters)
1 Teaspoon Vanilla
Frosting
1 Stick of Margarine
3 Tablespoons of Cocoa
1/3 Cup 2% Milk
1 Teaspoon Vanilla
Powdered Sugar
(amount varies depending on preferred consistency)
-Preheat Oven to 350 degrees-
In a medium saucepan, melt margarine and cocoa.
Once it's well blended, let it cool.
Mix flour and sugar together.
Slowly pour in the melted chocolate/butter and mix.
Beat in the eggs (or egg beaters) one at a time. Blend well after each egg is added. Next fold in the vanilla.
Once the mixture is silky smooth, pour into a brownie pan and bake at 350 for 30-35 minutes. Keep a close eye on them, you don't want to over bake them!
Now for the good stuff...frosting.
In a medium saucepan, bring margarine, cocoa, and milk to a boil. Remove from heat.
Add in the vanilla and powdered sugar. Less is more with the powdered sugar. It's easy to add an extra scoop; you can't exactly scoop it back out...
The consistency is totally up to you, but I like a decently sturdy frosting that won't run like crazy. I put in the sugar in around 1/2 cup intervals until I was satisfied. It should be spreadable, not runny.
Use a toothpick to check the brownies. If it comes out clean, you are good to go. If they are still a little sticky on top, that's okay! As they cool, they will firm up more.
Once the brownies are cool to the touch, spread the frosting over the entire pan. Try to refrain from eating it all before you ice the brownies. It's difficult though.
The finished product is a perfectly fluffy and chewy brownie that is to die for. You will need plenty of milk on hand because these babies are rich. With Father's Day around the corner, it's a perfect opportunity to whip some up for your Dad!
